If, like Sophie, you are a bit of a potato fan then you will LOVE these. Super easy, super cheap, pretty damn healthy and incredibly yummy. This potato recipe is one of my aunt Micky’s, so over the years it has affectionately become known as “Micky’s potatoes” in our house. We have made these potatoes hundreds of times, and they are especially great as an accompaniment to BBQs, roast dinners, steaks and other meats; they never fail to impress and every time we have guests they come back for seconds and usually ask for the recipe. I hope you like them as much as our family do.
- Cut potatoes in half
- Spread a very small amount of butter or margarine on each potato
- Sprinkle a minute amount of salt on each potato half
- Cook in the oven for 45mn at 240ºC.
Put your oven on at full whack. Get all your ingredients ready.
When choosing your potatoes go for ones that work best for jacketing, as that's what this dish resembles the most. Get a baking tray or grill pan (you can cover it in foil to save on washing up later). Cut the potatoes in half and spread a very small amount of butter or margarine (whichever you prefer) on each potato, then place on the tray/pan, butter side up. Next sprinkle a minute amount of salt onto each potato half.
Cook in the oven for 45mn at 240ºC. Take them out and enjoy!
